Remember that time I said that I’d make some fresh tomato salsa? Well, I did.
Salsa might just be my favorite thing…ever. It’s kind of a problem. Once I start, I can’t stop eating it. Like, whole bag of chips kind of can’t stop. I don’t have a sweet tooth – I have a salsa tooth. I’m convinced that’s a real thing.
It’s really more than just a love of salsa. It stems from a love of Mexican food. I can’t get enough! I could probably eat it every day and still want more. That’s also a problem.
Sweet Garden Salsa
3 lbs. tomatoes – peeled
1/2 cup onion, diced
1/2 tsp minced garlic
1/2 cup cilantro, diced
1 10 oz. can Rotel, mild
1 4 oz. can green chilies
2 Tbsp lime juice
1 tsp salt
1 Tbsp sugar
1 Tbsp honey
1 tsp ground cumin
1. Bring the tomatoes to a boil in a large pot.
2. Add to the boiling tomatoes: onion, garlic, cilantro, Rotel, and green chilies.
3. Combine lime juice, salt, sugar, honey, and cumin.
4. Using an immersion blender, mix all ingredients until the desired consistency is reached.
I find that allowing the salsa to simmer for about 15 minutes brings the flavors together. This recipe filled 3 pint sized jars for canning…almost 4. Well, it might have filled 4, but I didn’t even try. I ate the rest. Let’s be honest.
